What is the difference?

Price scale for starters, the synthetic can be the more budget friendly option.

Styling Synthetic holds it's shape which, if someone is going through treatment they can find it useful as when they wash they don't have to work on the style.

The downside is that the style can't be changed, outside of (on pieces with monofilament front) being able to change the parting.
